Ingredients
  • 1 ½ cup Shredded chicken skin removed
  • 14 oz (400 gram) Pinto beans drained and rinsed
  • Kosher salt for seasoning
  • 1 1⁄3 cup Romaine lettuce shredded
  • 1 1⁄3 cup Monterey jack cheese shredded
  • ¼ cup Fresh cilantro roughly chopped
  • 1 tablespoon Vegetable oil
  • ¾ cup Salsa sauce
  • 4 Flour tortillas burrito size
  • 1 1⁄3 cup Steamed white rice
  • 1 Chipotle chili in adobo sauce plus chopped chipotle chili
  • Guacamole for serving
Instructions
  1. In a pot, heat vegetable oil over medium-high heat.

  2. Then add ½ cup Salsa, chipotle in Adobo Sauce to taste.

  3. Now stir it until the mixture starts to sizzle, for about 2 minutes.

  4. Then add ¾ cup water and pinto beans and bring it to a low boil.

  5. Then stir in the chicken and cook it until the mixture is slightly thickened, for about 2 minutes.

  6. Then season it with salt and add the cilantro.

  7. Now heat the Tortillas.

  8. The arrange the Rice horizontally in the lower half of each tortillas leaving 1 ½ border on all sides.

  9. Top with the cheese evenly.

  10. Add the chicken mixture, lettuce, and the remaining salsa.

  11. Fold the bottom edge of each tortilla over the filling.

  12. Then tuck in the sides and roll up tightly.

SERVE
  1. Cut the burritos in half and serve with guacamole dipping.
