Again I’m back with my new combination of pizza. Now I am landed in Chinese cuisine. It is a native pizza of China. You will find an ingredient which is completely beyond imagination that is Chinese aubergine (eggplant). It is quite unnatural that eggplant is being used in pizza as the main ingredient. O let’s discover some uniqueness while preparing it.

Ingredients
  • 1 Chinese aubergine cut into 1⁄8 inch thick round
  • Sea salt to taste
  • Olive oil as required
  • 9-inch Pizza crust
  • ½ cup Marinara sauce
  • 1 Red bell pepper cut crosswise into 1 inch thick round
  • 8 oz (225 gram) Cabot sharp light cheddar
  • 1 tablespoon Fresh Thyme finely chopped
  • 1 tablespoon Oregano finely chopped
  • 1 tablespoon Fresh basil finely chopped
  • Crushed red pepper flakes to taste
Instructions
FOR PREPARING THE EGGPLANT
  1. Preheat the broiler and place the eggplant slices on foil-lined baking sheet.

  2. Drizzle with olive oil and season with salt.

  3. Then broil eggplant slices for 2 to 3 minutes or until lightly colored.

  4. Turnover and broil for 2 to 3 minutes longer or until colored on the second side.

  5. Remove them and put in the oven and bake it for 400⁰ F or 200⁰ C.

FOR PREPARING THE PIZZA
  1. Now spread Marinara Sauce over Pizza Crust.

  2. Then top with half of the cheese, half of eggplant and half of pepper.

  3. Now place the pizza crust on parchment lined baking sheet and bake for about 8 minutes or until cheese is melted and crust is crispy.

  4. Remove it from oven and sprinkle with herbs and crushed red pepper.

SERVE
  1. Cut the pizza into quarters and serve hot to feel the melted cheese inside your mouth.

  1. This pizza is quite unique and gift for vegetarians. This is one of the signature veg pizza in China with Italian blend which gives a sherry flavor. If your grandma’s and grand pa’s don’t love non-veg, treat them this pizza and make them feel special.
