Ingredients
  • 1 package Elbow macaroni
  • 2-pound Lean ground beef
  • ½ cup Onion chopped
  • 8 oz (225 gram) Tomato sauce
  • 4.5 oz (125 gram) Tomatoes diced
  • 15 oz (425 gram) Kidney beans / rajma rinsed and drained
  • 14 oz (400 gram) Whole kernel corns
  • 1 package Taco seasoning mix
  • 1 package Chili seasoning mix
  • 1 can Condensed cheddar cheese soup
  • 1 Canned milk
  • 1 cup Shredded cheddar cheese
  • 1 ½ teaspoon Garlic powder
  • ½ cup Sour cream
  • ½ teaspoon Salt
  • 1 cup Tortilla chips crushed
  • ½ teaspoon Black pepper
  • Water as required
  • ½ cup Sour cream optional
Instructions
  1. Preheat the oven to 350⁰ F or 175⁰ C.

  2. Fill a large pot with lightly salted water to a boil over high heat.

  3. Once the water is boiled, stir in the macaroni.

  4. Cook the macaroni uncovered, stirring occasionally until the macaroni has cooked through but still firm to be a bite, for about 8 minutes.

  5. Drain it well in a colander and set in the sink.

  6. Now over medium heat in a large skillet, cook the ground beef with onion or until the meat is browned for about 10 minutes.

  7. Break the meat up into crumbles as it cooks.

  8. Now add the tomato sauce, diced tomatoes, corn, kidney beans, taco seasoning and chili seasoning and bring to a boil.

  9. Reduce the heat to a simmer stirring occasionally for about 20 minutes.

  10. Now whisk the cheddar cheese soup and milk in the saucepan over medium-low heat and boil it until it smoothens.

  11. Whisk in 1 cup of shredded cheese, ½ cup of sour cream and garlic powder and season it with salt and black pepper.

  12. Now arrange the cooked macaroni into the bottom of a 10 X 15 inch baking dish and mix with the soup mixture.

  13. Then pour the ground beef chili over the macaroni and sprinkle with 1 more cup shredded cheddar cheese and crushed tortilla chips.

  14. Bake it in a preheated oven until the casserole is hot and bubbling and the cheese topping has melted, for about 20 to 30 minutes.

SERVE
  1. Now serve it by topping with sour cream.
