I have seen, many people have this dish with Naan Bread, they take it as the Indian version of pizza. So today I planned to show the behind scene of this simple dish.

Ingredients
FOR MARINATING THE CHICKEN
  • 2 tablespoon Peanut oil
  • 1 ½ lb (680 gram) Chicken breasts boneless and skinless
  • ¼ cup Yogurt
  • 2 teaspoon Lemon juice
  • 1 clove Garlic minced
FOR MAKING THE GRAVY
  • 1 ½ teaspoon Ground cumin
  • ½ teaspoon Ground cardamom
  • 1 tablespoon Ground coriander
  • 1 ½ teaspoon Paprika
  • ½ teaspoon Ground nutmeg
  • ½ teaspoon Cayenne
  • 1 Large onion finely chopped
  • 4 tablespoon Unsalted butter
  • ¾ cup Water
  • 1 ½ cup Fresh tomato puree
  • ½ cup Heavy cream
  • ½ teaspoon Freshly ground black pepper
  • ¼ teaspoon Kosher salt
  • ½ cup Fresh cilantro chopped; plus more for garnishing
Instructions
  1. Take a fork to prick the chicken breasts all over on both sides.

  2. Now arrange the chicken breasts on a sheet of plastic wrap, placing them apart from one another.

  3. Then cover them with another sheet of plastic wrap.

  4. Use the smooth side of the meat mallet and beat the chicken until the breasts are of a ¾th inch thick.

  5. Now take a bowl and whisk the Yogurt.

  6. Add 1 tablespoon peanut oil, lime juice, and garlic.

  7. Then add the chicken and rub the marinade over the chicken pieces and set the chicken aside.

FOR PREPARING THE GRAVY
  1. In a bowl add the coriander, cumin, cardamom, nutmeg, cayenne, paprika and grated ginger.

  2. Now in a heavy bottomed pan, melt the butter over medium-high heat.

  3. Then add the onion and sauté stirring occasionally until it is lightly browned and caramelized.

  4. Reduce the heat, then stir in the spice and the ginger mixture.

  5. Add the tomato puree, water, salt and heavy cream and bring the gravy to boil.

  6. Reduce the heat to gently simmer, uncovered until thick slightly, for about 3 minutes.

FOR PREPARE THE CHICKEN
  1. Take a skillet and heat it over high heat.

  2. Add ½ tablespoon of peanut oil.

  3. Now fry the chicken breasts in batches, turning them both sides until they are cooked through and browned well on both sides; for about 8 minutes.

  4. Then transfer the fried chicken to a cutting board and cut them into 1 ½ inch pieces.

  5. Now add the chicken to the gravy and continue to stir it occasionally, for 5 minutes.

  6. Remove the pan from the heat; add the black pepper, chopped cilantro and season it with salt.

SERVE
  1. The chicken tikka masala is ready to be paired with the main course.
