Salads are the soul of my life. I cannot think of a single day without salad and so each and every day I need to prepare varieties of salads to give a treat to myself. Since it’s morning now and I have to leave for my office so I am preparing this chicken and pepper salad to have it on my office break. You can also join me and prepare it hand in hand.

- 1 Garlic clove crushed
- 1 Whole roasted chicken meat torn into pieces
- 6.3 oz (180 gram) Leaves of lollo rosso, oak leaf, and lettuce
- 1 Lemon juice
- 3 Roasted red peppers
- 3 oz (85 gram) Prosciutto
- 5.3 oz (150 gram) Yogurt
- Salt for seasoning
- Pepper for seasoning
Take a salad bowl and whisk the lemon juice, garlic, and Yogurt together.
Then season it with salt and pepper and keep it aside for at least 5 minutes.
Once the dressing has been completed, tip the salad leaves and add the prosciutto, roasted pepper and Chicken in the dressing bowl.
Now toss it very well.
Your salad is ready to be served.
Isn’t it so easy guys??? The best part is, you can use the leftover roasted chicken for making this salad and honestly its very healthy and light. That’s why you can have a bowlful of it. If you are having any heavy food on your main course then you can always combine with it and if you are diet friendly, simply have this ideally.
