The chicken noodle soup will add warmness, a savory richness of flavors and plenty of its own healthful properties.

Ingredients
  • 1 Whole chicken
  • 3.5 lb (1.5 kg) Chicken cut into breast, thighs, backs, wings, and neck
  • 3-quart Low sodium chicken broth
  • 6 Carrots
  • 4 stalks Celery
  • 3 Medium onions
  • 4 Leeks
  • 5 Black peppercorns
  • 1 clove Garlic
  • 2 sprig Thyme
  • 10 sprig Fresh parsley
  • 1 Bay leaf
  • 2 tablespoon Unsalted butter
  • 1 teaspoon Freshly grounded peppercorns
  • 1 teaspoon Salt
  • 3 cup Egg noodles medium
Instructions
FOR PREPARING THE CHICKEN STOCK
  1. Place the chicken and chicken broth in a large stockpot and set it over medium heat.

  2. Roughly chop the carrot, celery, onion and add to the broth.

  3. Now add the peppercorns, garlic, parsley, thyme, bay leaf and enough water to just cover the chicken.

  4. Then bring the broth to a boil.

  5. Reduce heat to a simmer and cook until the chicken is very tender for about 1 hour 15 minutes.

  6. NOTE

    Skim the surface periodically to avoid foam.

  7. Then remove the chicken from the stock pot and place in a large bowl.

  8. Strain the stock through a very fine sieve into a large bowl or stock pot and discard the vegetables from it and keep it aside.

NOW FOR PREPARING THE SOUP
  1. Slice the remaining carrot, celery, onion, and leeks into ¼ inch thick pieces and set aside.

  2. Remove and discard the skin and bones from the chicken and cut meat into ½ inch pieces and set aside.

  3. Chop the remaining parsley leaf and set aside.
  4. In a pan over a medium heat melt butter and add the vegetables and cook until the onions are translucent for about 7 minutes.
  5. Now add the chicken, the reserved broth, salt, and pepper.

  6. Simmer the soup until the vegetables are tender for about 1 hour.

  7. Now add the egg noodles and parsley and cook until the noodles are tender for about 10 minutes more.

SERVE
  1. Your chicken noodle soup is ready. Serve it steaming hot.
