Chicken and Bacon Patties

Ingredients
  • 12 oz (350 gram) Chicken breasts
  • 4 slices Bacon
  • 2 medium Bell peppers
  • ¼ cup Sun-dried tomato pesto
  • ¼ cup Parmesan cheese
  • 1 large Egg
  • 3 tablespoon Coconut flour
  • Salt to taste
Instructions
  1. In a pan, start frying the bacon.

  2. Leave it to sizzle and get nicely browned on the one side.

  3. While the bacon is cooking, measure out ¼ cup tomato pesto sauce.

  4. When the bacon is crisped on one side, flip it to the other side.

  5. Now chop two bell peppers into halves and add them to a food processor until they are nicely chopped.

  6. Then pour all of the bell pepper mixtures into a bowl and pat it dry with a paper towel.

  7. Once the bacon has finished cooking, add the 12 oz chicken breast and bacon to the food processor.

  8. Grind them together into a paste.

  9. Now add the chicken and bacon mixture to the pepper mixture.

  10. Then add the parmesan cheese, tomato pesto sauce, and egg to the above mixture.

  11. Mix everything together very well.
  12. Now add the coconut flour as needed.
  13. NOTE

    I needed up to 3 tablespoons of it. You have to make a nice solid mixture to form a patty.

  14. Now with your hand, form the patties grabbing up a small scoop of the chicken mixture and pressing it between your hands.

  15. Then fry the patties with a little oil over medium to medium-high heat.

  16. Crisp each side and once they are crisp, flip them over.
SERVE
  1. Once done, set on a paper towel to cool and serve them.

  1. Chicken and Bacon Patties is so crisp and yummy that you will feel every bit of it. I love to serve them with small sprigs of Ketchup, dill and Chili Garlic Sauce. I’m so excited to surprise my bf and glad to share the recipe.
