My family is very fond of tortellini and when I came to know that these tortellini can also be prepared at home, I gave a try and really turned out as it is sold in the market. Tortellini is generally made with either round pasta wrapper or square pasta wrapper. So, in today’s topic, we will make with the fine art of rolling, and shape this little tortellini.

Tortellini is generally made with either round pasta wrapper or square pasta wrapper. So, in today’s topic, we will make with the fine art of rolling, and shape this little tortellini.

Ingredients
  • 1 ¾ cup All-purpose flour
  • ¼ cup Semolina flour
  • 2 Eggs
FOR THE FILLING
  • ¼ cup Grated parmesan cheese
  • 15 oz (425 gram) Ricotta cheese
  • ½ cup Mozzarella cheese grated
  • ¼ cup Fresh Basil chopped
  • ¼ cup Fresh parsley chopped
  • Pinch of Nutmeg
  • Salt to taste
  • Pepper to taste
Instructions
FOR MAKING THE PASTA DOUGH
  1. In a blender add flour, semolina flour, and egg.

  2. Blend it for few seconds.

  3. Then again blend it for a longer time until the dough begins to come together.

  4. Now place the dough on a well-floured board and knead it for several minutes, until it turns smooth.

  5. NOTE

    The dough should be moist.

  6. Now wrap the pasta dough in a plastic wrap and rest it for at least 30 minutes.

MEANWHILE PREPARE THE FILLING
  1. In a bowl, mix ricotta, mozzarella, parmesan, basil, parsley and nutmeg.

  2. Stir them very well so that they get well combined and season it with salt and pepper.

  3. Now take the pasta dough and divide it into halves.

  4. By using a pasta machine or a pasta rolling attachment for a standing mixture, roll the pasta into a thin sheet.

  5. Now place the sheet of dough on parchment paper.

  6. Meanwhile, with a pastry cutter, cut circles in the pasta dough, approx. 2 inches in diameter.

  7. Now with a spoon, place a spoonful of filling in the center of the circle.

  8. NOTE

    Don’t overfill.

  9. Dip your finger in the water and moisten the edge of the circle.

  10. Then fold the circle into halves and pinch together well.

  11. Now fold up the sealed edge like a cuff.

  12. Then place the flat end of the half circle against your pinky and fold the corner around and pinch closed.

  13. Now carefully remove the tortellini from your finger and place it on a parchment paper lined tray.

  14. Repeat these process with rest of the circles.

  15. Now boil the tortellini in salted boiling water for 2 minutes.

  16. Your tortellini is ready for usage or you can store it in the refrigerator for later use.

As these are homemade tortellini, they are fresh and you can get the taste of cheese and fresh herbs which will leave you swooning. This tortellini can be used in Soups, in Salads or you can stuff them with your favorite filling.
