Doughnuts are my hot favorite and especially I love to serve them for evening snacks. They are so fancy and classy that you can dress them up according to your choice. In my pastry school, I learned varieties of doughnut making and my mentor, Kathy’s hot favorite is cake doughnut. And today I’m going to surprise her with a boxful of a cake doughnut.

Ingredients
  • ¼ cup Sour cream
  • 2 quarts Canola oil
  • 2 cups All-purpose flour plus more for dusting
  • 1 cup Granulated sugar
  • 1 ½ teaspoon Baking powder
  • 1 ¼ cup Cake flour
  • ½ teaspoon Baking soda
  • 1 ½ teaspoon Grated nutmeg
  • 1 ½ teaspoon Salt
  • 1 cup Buttermilk
  • 1 envelope Active dry yeast
  • ½ teaspoon Ground cinnamon
  • 1 ¼ cup Confectioners sugar
  • 1 teaspoon Vanilla extract
  • 1 Whole egg
  • 3 Egg yolks
Instructions
  1. In a saucepan, over medium-high heat, heat the oil.

  2. Now take a baking pan and lightly dust it with all-purpose flour.

  3. In a second pan, line a paper towel.

  4. Set them both aside.

  5. Now take a heatproof bowl and place the sour cream on top of a double boiler.

  6. Set it over a pan of simmering water.

  7. Heat it until warm to touch.

  8. Then remove it from the heat and keep it aside.

  9. Now in a big bowl, sift together all-purpose flour, cake flour, baking soda, baking powder, granulated sugar, salt, and nutmeg.

  10. Mix them very well.

  11. Then make a well in it and make a well a place yeast in the center.

  12. Now pour the warm sour cream over the yeast and let it sit for 1 minute.

  13. In another medium bowl, add Buttermilk, whole egg, egg yolk and vanilla extract and whisk it well.

  14. Then pour this mixture over the sour cream.

  15. Now by using a wooden spoon, slowly draw flour mixture into egg mixture by stirring it until it turns smooth.

  16. Continue stirring until all mixture has incorporated and the dough is sticky.

  17. Then sift a heavy coat of flour onto a clean work surface and turn out the dough.

  18. Sift another heavy layer of flour over the dough.

  19. Then pat the dough until it is ½ inch thick.

  20. Now take a doughnut cutter of 2 ¾th inches and cut out doughnut as close together as possible.

  21. Transfer the doughnuts to the floured pan and let it rest only for 10 minutes.

  22. Now carefully transfer the doughnut to the hot oil and fry it until it is golden brown, about 2 minutes per side.

  23. The by using a slotted spoon, transfer the doughnuts to lined plate.

  24. Repeat the same steps with remaining doughnuts also.

SERVE
  1. When the doughnuts are cool enough to handle, sift the confectioner sugar over top and serve immediately.
