Ingredients
  • ¼ cup Butterscotch chips
  • 1 cup Brown sugar
  • 2 tablespoon Butter
  • 1 tablespoon Vanilla
  • 2 cups Half-and-half
  • 1 ½ cup Whipping cream
  • 6 Large egg yolks
Instructions
  1. In a 2-quart pan, over medium heat stir brown sugar, butter, and vanilla until butter is melted, sugar is dissolved and the mixture is bubbly; for about 3 to 4 minutes.

  2. Now whisk in ½ cup whipping cream until smooth and then remove the butterscotch mixture from the heat.

  3. Then over medium-high heat, place the 4-quart pan and combine the remaining 1 cup whipping cream and the half-and-half and bring to a simmer.

  4. Meanwhile in a bowl beat egg yolks to blend.

  5. Whisk ½ cup of the warm cream mixture into egg yolk.

  6. Then pour egg yolk mixture into the pan with cream.

  7. Now stir it constantly over low heat until mixture is slightly thickened; for 2 to 4 minutes, then immediately remove from the heat.

  8. Through a fine strainer pour it into a clean bowl and whisk in butterscotch mixture.

  9. Chill it until cold stirring occasionally, about 2 hours or cover and chill up to 1 day.

  10. Freeze the mixture in an ice cream maker according to manufacturer’s instruction.

SERVE
  1. When it is softly frozen garnish with butterscotch chips and serve or transfer the ice cream to an air-tight container and freeze until firm for at least 6 hours or up to 1 week.
