I had burnt garlic fried rice many times in the restaurant and so it made me wonder about how it goes and how it is prepared. So one day I fixed up my mind to prepare this recipe and touch wood it turned to be a signature dish of mine.

I had burnt garlic fried rice many times in the restaurant and so it made me wonder about how it goes and how it is prepared. So one day I fixed up my mind to prepare this recipe and touch wood it turned to be a signature dish of mine.

Ingredients
  • ½ cup Basmati rice or any long grained rice
  • 3 cup Water
  • ¼ teaspoon Salt
  • ¼ teaspoon Sesame oil
FOR STIR-FRYING
  • 2 tablespoon Sesame oil
  • 1 tablespoon Garlic finely chopped
  • 2 oz (60 gram) Spring onions
  • 3 oz (80 gram) Carrots
  • 1 oz (30 gram) French beans
  • 1 medium Capsicum finely chopped
  • 1 teaspoon Finely chopped celery optional
  • ½ teaspoon Black peppercorns crushed
  • 1 teaspoon Soy sauce
  • ¼ teaspoon Rice vinegar / regular vinegar
  • Salt to taste
  • 2 to 3 tablespoon Chopped spring onions green part
Instructions
  1. Rinse ½ cup basmati rice very well in water.

  2. Then soak rice in enough water for 30 minutes.

  3. After 30 minutes drain the rice and keep aside.

  4. Now in a pot boil 3 cups of water.

  5. Add ¼ teaspoon salt and ¼ teaspoon oil to it.

  6. Bring the water to a boil on a high flame.

  7. Then add the rice, gently stir or shake the pot.

  8. Cook the rice on high flame till it becomes al dente (almost cooked).

  9. NOTE

    If you want you can cook the rice more.

  10. Then in a colander or strainer, strain the rice.

  11. Now gently rinse the rice with running water.
  12. Cover and keep the rice aside till it cools down. The rice has to be cooled to room temperature.

  13. Now rinse the veggies and chop them finely.

  14. Then in a wok, heat 2 tablespoon sesame oil.

  15. Add 1 tablespoon finely chopped garlic.

  16. On a low flame begin to stir-fry the garlic.

  17. When the garlic turns golden, remove 1 to 2 teaspoon of the garlic and keep aside.

  18. Now continue to fry the garlic till it becomes browner and a bit burnt.

  19. Once the garlic becomes browner add spring onion’s whites.

  20. Then add finely chopped French beans and stir-fry for 2 minutes on a high flame.

  21. Add all the other veggies and mix well.

  22. Now add black pepper and chopped celery and mix very well.

  23. Stir fry veggies for 2 to 3 minutes.

  24. Then add soy sauce and mix it well with the veggies.

  25. Now add the rice and season it with salt.

  26. Mix and toss the rice very well with the stir-fried veggies and burnt garlic.

  27. NOTE

    You can also mix with a fork.

  28. Stir fry rice for a minute.

  29. Then add the rice vinegar and mix it well.

SERVE
  1. Switch off the flame and lastly, add ¼ cup spring onion’s greens and place over burnt garlic for garnish and serve hot.

  1. Décor your dining table with a bowl of hot burnt garlic fried rice along with Chili Chicken, Veg Manchurian or any Chinese gravy dish and make it a pleasant presentation. It’s one of the popular variety of veg fried rice in a Chinese restaurant.
