Ingredients
  • 6.5 oz (185 gram) Plain flour
  • 0.2 oz (7 gram) Dried yeast
  • 2 teaspoon Sugar
  • 4.5 fl oz (140 ml) Warmed milk
  • 2 tablespoon Unsalted butter melted
  • ½ Egg lightly beaten
  • Olive oil for deep frying
  • Cinnamon sugar or caster sugar for serving
Instructions
  1. Combine ½ the milk, yeast and sugar in a bowl and start to dissolve.

  2. Set it aside for 10 minutes.

  3. Now add the remaining milk, butter, and egg to the yeast mixture.

  4. Place the flour in a large bowl and add the combined wet mixture.

  5. Mix it with a wooden spoon until well combined.

  6. Cover it and set aside for 2 to 3 hours, until doubled in size.

  7. Now roll 0.7 oz (20 gram) portion of the dough into balls about the size of a Ping-Pong ball and arrange on a lightly floured tray.

  8. Then cover it tightly with plastic wrap and allow to prove for 2 hours, until the bomboloni look light and fluffy.

  9. NOTE

    You can also prove the bomboloni overnight in the fridge.

  10. Now fill a deep saucepan with 10 cm of olive oil and bring to heat.

  11. Deep fry the doughnuts in batches for 2 to 2.5 minutes, turning a few times until golden.
  12. Now drain on a paper towel.
  13. Then roll in cinnamon sugar or caster sugar.
  14. NOTE

    If you want you can make a small slit in the doughnuts with the tip of a knife and fill with a teaspoon of jam.

SERVE
  1. Serve it hot immediately.

  1. This is a traditional dessert eaten in Italy. It comes out a masterpiece doughnut. Bombolini can be dusted simply with sugar or filled with vanilla custard or doused in melted chocolate, whatever you prefer. But make sure you make more as they disappear from the plate very quickly.
