In a bowl, mix flour, salt, and pepper.
Now in a separate bowl whisk the egg yolk and olive oil.
Drizzle this egg and oil mixture into the flour and mix with a fork.
Then slowly pour the beer while whisking so it forms a silky batter.
You can add a little baking soda to the batter to make the fritters crispier.
Cut the unpeeled zucchini into ½ cm rings or 1 cm batons and remove the stamen.
Season it with salt and pepper.
Heat oil in a pan.
Then using tong dip the zucchini batons into the batter and add them to the oil one at a time.
Fry them till they are golden brown.
Now place the fritters on tissue paper so that excess oil gets absorbed.
The beer battered zucchini fritters are ready to serve hot.
These fritters are magnificent and light which can be paired with wine. It turns out a delicate treat with desired dips or ketchup. I love to dip them in Chili-Garlic Dip which adds the flavor to the delicate zucchini flowers.
