On a cold stormy night, I was alone at my home and it was very boring. I quickly called up my BFFs Sarah and Florence and within a minute they were in. I was wondering what to prepare for them which will be quick, hot and steamy. At that very moment, Sarah cracked a recipe and prepared it. OMG! It was a heart-warming soup she prepared. We, three musketeers, fought off the cold with a hot bowl of beef goulash soup. I couldn’t resist myself to know the secret of that soup. So guys, today I am sharing Sarah’s recipe. Ingredients
  • 1 tablespoon Rapeseed oil / olive oil
  • 1 large Onion sliced
  • 3 Garlic cloves sliced
  • 7 oz (200 gram) Extra lean stewing beef finely diced
  • 1 teaspoon Caraway seeds
  • 2 teaspoon Smoked paprika
  • 14 oz (400 gram) Tomatoes chopped
  • 20 fl. oz (600 ml) Beef stock
  • 1 medium Sweet potato peeled and diced
  • 1 Green pepper de-seeded and diced
FOR TOPPING
  • 21 oz (150 gram) Curd or yogurt
  • Few Parsley leaves chopped
Instructions
  1. Heat the oil in a large pan.

  2. Add onion and garlic to it and fry it for 5 minutes.

  3. Now put the beef, increase the flame and start frying till it turns brown.

  4. Then add the caraway and paprika and mix well.

  5. Put tomatoes and Beef Stock, simmer the flame and cover it with the lid.

  6. Leave it to cook for about 30 minutes.

  7. Now add the sweet potatoes and green pepper.

  8. Again cover the lid, simmer the flame and cook for 20 minutes or until the potatoes and beef are tender.

  9. Now put off the flame and allow it to cool a bit.

SERVE
  1. Serve it in a bowl topped with the yogurt and parsley.

  1. Soup, it's yum! Nourishes my soul and makes me feel seduced towards it. It is very healthy, hearty soup based on low fat, lean beef; infused with sweet potatoes and smoked paprika. If you wish you can pair up this soup with Whole Wheat Toast, Garlic Bread, Toasted Sourdough or have it ideally for a healthy lunch or dinner.
