Pulao or pilaf is easy one-pot Indian rice cooked with mild spices. It is very common in Indian homes during festivals. This is considered as a royal main course in Indian cuisine. Being an Indian I love to cook pulao on my weekends and share it with family.

Ingredients
  • 2.2 lb (1 kg) Fine grain rice
  • 7 oz (200 gram) Sugar
  • 5.3 oz (150 gram) Cashew nuts
  • 5.3 oz (150 gram) Raisins
  • 8.8 oz (250 gram) Ghee (clarified butter)
  • 6 to 8 strands Saffron dissolved in ½ cup milk
  • 10 Bay leaves
  • 0.1 oz (2.5 gram) Green cardamoms
  • 0.1 oz (2.5 gram) Cinnamon
  • 0.1 oz (2.5 gram) Cloves
  • Salt to taste
  • 67.5 fl oz (2 liters) Water
  • 2 tablespoon Pulao masala
Instructions
  1. Switch on the flame and put a big pot over it.

  2. Now add clarified butter, whole cardamom, cinnamon, cloves, and bay leaf and stir it.

  3. Then after 30 seconds add cashew nut, it will be slightly brownish.

  4. Add the washed grains to the pot and combine it for 2 minutes.

  5. Now add water to it.

  6. NOTE

    The water should be 2-inch above the level of the rice.

  7. Add salt, raisin, sugar and Pulao Masala and stir it.

  8. Then cover the lid for 10 minutes or until the water level will decrease and rice is soft.

  9. Add the saffron dissolved in ½ cup milk to it.

  10. NOTE

    Remember to stir the rice grains occasionally and keep on checking it.

  11. Now simmer the flame and cover the lid again for about 5 minutes or until the rice is steamed 80 %.

  12. Remove from the heat and keep the lid closed for about 20 minutes more.

  13. NOTE

    This resting time will allow the spices to get infused with the pulao.

SERVE
  1. The pulao is ready. Garnish according to your choice and serve hot.

  1. If you are planning for a new rice recipe then this could be a good choice. In my home, this is an all-time favorite main course recipe. I love to serve my guests this pulao with Yogurt Raita or any kind of curry. So, without delaying let's prepare it and feel the essence.
