Ingredients
  • ¼ cup Rice vinegar
  • 1 Whole chicken cut into halves
  • 2 cloves Garlic crushed
  • 1 tablespoon Salt
  • 2 tablespoon Butter melted
  • 2 tablespoon Barbecue sauce plus ½ cup
  • 1 teaspoon Ground black pepper
  • 1 teaspoon Onion powder
  • 1 teaspoon Paprika
  • ½ teaspoon Cayenne pepper
Instructions
  1. Firstly, cut ½ inch deep slashes in each chicken half.

  2. Then 2 cuts in each breast, two in the thigh and 1 cut on the leg.

  3. Now take a bowl and add rice vinegar, Barbecue Sauce, and garlic and mix it well.

  4. Place the chicken in the mixture and turn it to coat on all the sides.

  5. Now put the chicken halves, cut side down and cover the bowl with plastic wrap.

  6. Refrigerate it for 1 hour.

  7. Now, preheat a grill pan or an outdoor gas or charcoal barbecue to a medium heat.

  8. Take a few paper towels and fold them several times to make a thick square.

  9. Blot a small amount of oil in the paper towel and quickly wipe the hot grates of the grill.

  10. Now take the marinated chicken pieces and arrange it on the preheated grill.

  11. Barbecue it, turn once mid-way and cook it for 10 minutes.

  12. Then transfer the grill-marked chicken to a cookie sheet and then place it in the oven, for 15 minutes.

  13. Once done, remove it from the oven and brush it with butter and the barbecue sauce.

  14. Again, return it to the oven and barbecue for 30 minutes basting the chicken for a second time, halfway through.

SERVE
  1. Once it has done, take out and serve hot with extra barbecue sauce.
