I first landed in Madrid a few years back to meet my friend Jordan as he invited me to attain the Tomatina festival. There I first stepped into his beautifully decorated restaurant where he himself is the head chef and he surprised me with this baked salmon fish. You won’t believe, it was the best-baked salmon recipe I ever had and I was sure that my tour will be full of fun and foods.

- 2 Salmon fillets
- 1 tablespoon Fresh parsley chopped
- 1 teaspoon Dried basil
- 6 tablespoon Light olive oil
- 1 teaspoon Salt
- 1 tablespoon Lemon juice
- 1 teaspoon Ground black pepper
- 2 Garlic cloves minced
- 6 tablespoon Olive oil
In a bowl, add garlic, olive oil, basil, salt, lemon juice, pepper, and parsley and mix it well.
Then place the salmon fillets in a baking dish and pour the marinade mixture over the salmon fillets so that it gets covered with the marinade.
Now in a refrigerator marinate it for about 1 hour, turning it occasionally.
Once done, preheat the oven to 375° F or 190° C.
Take an aluminum foil and place the fillets in and cover with marinade and seal it.
Now place the sealed salmon fillets in a dish and bake for 35 to 45 minutes until the salmon turns tender and flaky.
To get sure the tenderness check it with a fork or toothpick.
The baked salmon is ready to be served.
