Ingredients
FOR THE BASE
  • 4.5 oz (125 gram) Butter melted
  • 9 oz (250 gram) Digestive biscuit
FOR THE FILLING
  • 18 oz (500 gram) Mascarpone or cream cheese at room temperature
  • 6 oz (165 gram) Caster sugar
  • 4 to 5 Lemon juice plus the rind
  • 4 Eggs
  • 4 fl oz (125 ml) Cream
  • Icing sugar for serve
  • Fresh fruits for serve
Instructions
  1. Preheat the oven to 180⁰ C or 350⁰ F.

  2. Now brush a 20 cm loose-bottomed cake tin with melted butter.

FOR MAKING THE BASE
  1. Finely grind the biscuits.

  2. Add butter to it and knead well till combined.

  3. Transfer to the cake tin and spread evenly over the base and 2⁄3 rd of the way up the sides and refrigerate it.

FOR PREPARING THE FILLING
  1. Now beat the cream cheese, caster sugar, and vanilla essence until creamy.

  2. Then add the lemon rind, lemon juice, egg yolks and cream.

  3. Beat them well until light and fluffy.

  4. Use an electric beater to the egg whites until peaks form.

  5. Now add it to the cream cheese mixture and fold in until just combined.

FOR BAKING THE CHEESE CAKE
  1. Pour this into the prepared cake tin and bake it for 35 minutes or until set in the center.

  2. Then remove from the oven and cool it.

  3. Cover it loosely with plastic wrap and refrigerate overnight.

  4. Then take out from the refrigerator 30 minutes before serving.

SERVE
  1. Dust with icing sugar and fresh fruits to serve.
